My Birthday Cupcakes :)

Hey everyone! geez, it's been a while since I've posted something in here. 

Anyhow, last monday I baked my RED VELVET birthday cupcakes with my cousins and it wa soo good! :)

After my cousin transfer the batter into the cupcake pan.. here they are:



And they all went to the oven for 25 minutes!


and Here they are.. hot and fresh from the oven! YUM!







Sorry I forgot to take pics of the finished product. This red velvet has a cream cheese toping. And for some reason (and I know i took some pics of them) it got deleted on my phone.. hehe  :)

Polvoron: Every Filipinos Favorite

When I was a little girl there are only two things that rocks my world: SAMAPALOC (TAMARIND -- the super sour one) and POLVORON!

One of the famous bakeshops here in the Philippines are making one of the best polvoron I have ever tasted! Promise, you will forget your name once you've tried it!

last Sunday, I made a very delicious polvoron -- according to those who have tasted it. :) here are my ingredients and procedure-- I just estimated though. :)



Flour
Skimmed Milk (If you are diet conscious person, if not go to a full milk pref. ALASKA powdered milk or NIDO)
Sugar
Margarine (not butter. According to my mother, margarine won't make your polvoron hold itself.)
Oreo Cookies or Pinipig (Optional. If you just want some flavors)
Molder
Papel de hapon /cellophane (for wrapping)

Procedure:


1. Toast the flour in a not-flat pan. Do not burn the flour! Just toast it. How would you know if it is toasted? if it is brown in color. You can taste it. If it tastes like flour then keep on cooking. If it tastes cooked then stop. Don't you worry you would know the taste of  an uncooked flour-- if it tastes.. FLOUR!

2. Then add all the dry ingredients. Mix them altogther


3. Then Add the Margarine. Should it me melted or not? It depends on your flour mixture. if the flour is still hot, then the margarine can melt itself. however if it is almost at room temperature, then it is time to melt the margarine. Don't worry nothing will happen if you will melt or not the margarine.


4. Then mold your polvorone. Put it in a cellophane and serve!


Simple isn't? try it at home and enjoy!

Making Cut-Out Cookie Dough and Royal Icing for the First Time

I made Royal Icing at home last weekend. Well, if you are always online like me, and have all the opportunities to learn new and creative things on Youtube and other helpful sites, very well then -- Congratulations! You're teaching yourself new hobbies! :)

Anyhow, I made Cutout cookies last Saturday. Man! The way I watched it at http://bakeat350.blogspot.com/ it makes me feel that I can do it! Not that I have photographic memory, but I really love baking! So I guess, regardless of the difficulty, I can surely make one!

It wasn't that easy at first. Making the cookie dough wasn't that easy (thank you! lol) I didn't expect anything at all. Well, maybe I made some mistakes along the way that made the dough really stiff. It was hard for me to knead it on our glass table. But I was able to baked it and it tastes delicious by the way!

While I was creaming my butter, I thought it'll be easy, but as I added powdered sugar -- It was getting thicker and it's hard on my hand mixer to mix.. So I added water. Hmm, it went out really good. But those icing that sticks on my bowl wasn't good! ahaha...

But all in all, it was good for a first timer... :) Forgive me that I have no pictures because I made these around 6 a.m and ended around 12nn! ahahahahaaha... Yes I am a first timer! But I will take heart! I will try to do it this week again! :)

Cookie Ingredients:

Vanilla-Almond Sugar Cookies

3 c unbleached, all-purpose flour
2 tsp baking powder
1 c sugar (I use sugar that I've stored vanilla beans in)
 2 sticks (salted) butter, cold
 1 egg
 3/4 tsp pure vanilla extract
1/2 tsp pure almond extract

Here's How:

Preheat oven to 350.

Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg and extracts and mix. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.

The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling 

 Don't forget to refrigerate it for an hour or more! - well I didn't do this but most bakers would!

Roll onto a floured surface and cut into shapes. Place on parchment lined baking sheets.



Here's for the ROYAL ICING

Ingredients:
4 TBSP meringue powder
scant 1/2 c. water
1 lb. powdered sugar
1/2 - 1 tsp light corn syrup
few drops clear extract (optional)


How you can do it: Don't worry it's easy!

Combine the meringue powder and water. With the paddle attachment of an electric mixer, beat until combined and foamy.

Sift in the powdered sugar and beat on low to combine. (Do NOT skip the sifting!) 

Add in the corn syrup and extract if desired. 
Increase speed to med-high/high and beat for about 5 minutes, just until the icing is glossy and stiff peaks form.

Cover with plastic wrap touching the icing or divide and color using gel paste food colorings.
This "stiff" icing is perfect for outlining and even for building gingerbread houses and monogramming. To fill in your cookies, add water to your icing a teaspoon at a time, stirring with a rubber spatula, until it is the consistency of syrup. This technique of filling a cookie with thinned icing is called "flooding."

I Found a Treasure!

One good thing about my work is that I am virally online! As in.. I am anywhere and everywhere in the virtual world. Anyhow, as I wonder and search for a chocolate cupcake recipe, I fell into this website, which I think is the most adorable and helpful bake-site I've ever seen.


Alright, that's good! ahaha.. Well, I found this site very unique and very cute and very creative! :)

Wedding Project

Doc Donna, our church doctor is getting married! :) And we're giving her principal sponsors bridal cupcakes!

So, the cupcake should be chocolate with white frosting! :)

Hmm I wonder how I can do all this! hmm I need lots of hands!!!!!

One of the best present ever this year 2011! My Parents bought an oven! YAHOOOOO!


Well, one good thing for us and for me.....

I guess I must consider going to business! :) :) :)

But i need to pray for it......


hmmm...


Definitely will run one in the future! But first, I must know how to budget and really get my self filled with knowledge!

Chocolate Cupcakes

It wasn't really my first time to bake cupcakes.... well this is my second! :D

Actually, I was trying to figure out how to make icing to frost my cupcakes and with all the research and the hardwork.. here they are....











This was my very first time decorating or frosting cupcakes! Actually, my brother and sister did most of it... ahaha!

It was really fun baking!
